Chilled Cucumber & Spinach Soup

Chilled Cucumber & Spinach Soup

2 cups water
1 cup coconut milk
2 cucumbers
2 handfuls of spinach
1 bundle of chives
Juice of 1 lemon
A dash of pepper, garlic salt, coriander, and dill. Or whatever you like.

Add all in a blender and blend!

Top with chopped nuts and fresh herbs. I used almonds, chives and thyme.

For a spicier taste, add a jalapeño pepper. For smoother texture, add avocado or a banana.
